If you hunt or have friends who provide you with game, you need this recipe. Works great with elk, deer, antelope, what have you. I got this recipe from our friend Susie, whose husband Eric keeps their freezer stocked with lean, healthy meat. We had it when we were in Keystone with them and then fixed it at home with antelope this past weekend. Awesome!
Wild Game Stroganoff recipe
Cut up 1 lb meat into small chunks. Marinate (anywhere from 15 min. to a couple of hours) with a little red wine in the refrigerator. Put into big ziplock bag with several tablespoons of flour plus salt and pepper and shake it up. Meat should be well coated with flour. Melt about a half stick of butter in pan and brown meat. Add 3 cans of beef consume soup. Let it simmer for at least an hour. Add sliced mushrooms about 10 minutes before you are going to eat. (if it hasn't thickened up enough you can add a little corn starch). Take off the heat and let cool for a few minutes then add 1/2 to 1 cup of sour cream.
Serve over rice or noodles.
