Every once in a while I share a favorite recipe which will delight your friends and impress your spouse. Tomorrow night we're having some friends over for a bowl of soup and some good bread. Here's the soup I just whipped up. My sensory target was the soup they serve at the Olive Garden. It was the first time I tried it, and I must say I amaze myself sometimes.
Pasta e Fagioli
Sauté 1 cup each of the following in good olive oil until tender.
3-5 cloves minced garlic
1-2 pounds browned ground beef (use Italian Sausage if you prefer)
Large can of Italian crushed tomatoes
3 cans canellinni beans
3 cans beef broth
3 diced young zuchinni
When the soup is simmering, add 1 ½ cups gemelli or other small, chewy pasta. Season to taste with oregano, basil, and rosemary, fresh herbs from the garden if you have them. If not, plant some tomorrow. And I may have added a pinch or two of cayenne pepper.Finish each bowl of soup with a handful of fresh grated Parmesano Regianno cheese. Serve with a hunk of good bread.
